Based off our workshop series at Ghanaian churches in Worcester, MA, the Healthy Ghanaian Cookbook is a collection of recipes created by Peggy Akufo from the Apostolic Church at Bethsaida Christian Center. The recipes were altered to increase nutritional value. Calorie and nutrition breakdown for each recipe is included.DOI
